Polenta, the heart of northern Italy

Simple ingredients. Deep roots. A dish that has fed generations.

Polenta Uncia

Lake Como's own polenta. Coarse cornmeal is layered and baked with melted alpine cow and goat cheeses, like Valtellina Casera or Bitto, with butter and garlic.

What is polenta?

Cornmeal slowly cooked in water until soft and creamy. It can be served warm and spoonable, or cooled, sliced, grilled or baked. In northern Italy it goes with braised meats, mushrooms, sausage, cheese and rich sauces. For generations it was not a side dish but the foundation of the family meal.

A short history

Its roots reach back to the grain porridges of ancient Rome. After maize arrived from the Americas in the 1500s, polenta flourished on the northern plains and became a staple in Lombardy, Veneto and Friuli. Each area kept its own tradition, from yellow and white corn polenta to buckwheat polenta in alpine valleys like Valtellina.

The polenta we serve: Floriani Red Flint

We cook with Floriani Red Flint cornmeal from Camas Country Mill. Floriani is an Italian landrace corn prized for polenta, with a fuller, more distinctive corn flavor and a rustic character. Its hearty texture and rich color suit the slow-cooked braises, mushrooms and sauces served with polenta in northern Italy.

Why it matters

For many northern Italians, polenta is the food of home, family and memory. A few basic ingredients, transformed with patience into something warm, generous and deeply Italian.
